Sweet Potato Crisp Recipe

Base

Ingredients

  • 2 1/2 lbs sweet potatoes or yams
  • 2 lbs carrots
  • 3/4 cup orange juice (1/2 cup is enough don”t let brad put too much in)
  • 2 tablespoons honey
  • 2 teaspoons cinnamon
  • 1 clove garlic
  • 2 tablespoons butter
  • [omit] sprinkle of salt and pepper

Method

  1. cut up potatoes or yams and carrots and boil for 20 minutes
  2. puree in food processor or blender
  3. add other ingredients mix in blender mom just mashes them in a bowl
  4. put into greased casserole dish
  5. at this stage you may refrigerate or freeze up to 2 weeks

Topping

Ingredients

  • 1/3 cup butter or margarine
  • 1 1/4 cup bread crumbs
  • 1/2 cup chopped pecans or almonds
  • 1 tablespoon parsley

Method

  1. melt butter or margarine
  2. mix together bread crumbs pecans and parsley
  3. add melted butter to mixture
  4. spread as topping on base
  5. bake at 350 degrees for 40 minutes — 20 minutes covered 20 minutes uncovered (serves 8-10)
